Avocado Feta Salad Recipe
This fresh, healthy, and protein-filled salad is loaded with crisp cucumbers, juicy tomatoes, creamy avocado, salty feta cheese, and chickpeas. The perfect crowd-pleasing side dish for summer BBQs and patio dates.
Ingredients:
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 1 tbsp minced garlic
- ½ tsp salt
- ¼ tsp black pepper
- 2 cups cherry tomatoes, halved
- 1 cucumber, chopped
- 1 can chickpeas, drained & rinsed
- ½ red onion, sliced thin
- 1 avocado, chopped
- 1 cup feta cheese cubes
- ¼ cup cilantro, chopped
Instructions:
Combine the olive oil, lemon juice, minced garlic, salt, and pepper in a bowl for the dressing. Combine the remaining ingredients in a salad bowl, add the dressing, and toss well to coat. Best served immediately. This salad pairs perfectly with barbecued garlic chicken thighs or steak skewers.
