Carrots In A Blanket Recipe

This recipe makes the cutest summer appetizer and is perfect for your plant-based friends. Grab some fresh baby carrots and puff pastry from the market for this fun vegan twist on pigs in a blanket. 

Ingredients:

  • 15 baby carrots
  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • 1 tbsp dill
  • 1 package vegan puff pastry
  • Yellow mustard, for dipping

Instructions:

Preheat oven to 350 and line a baking sheet with parchment paper. Boil carrots in water until just tender. Do not let them get too soft or they will break. Remove from water and let cool for 5 minutes. Heat up the olive oil in a skillet and add the carrots. Toss with dill, salt, and pepper. Cook for 5 minutes or until golden brown. Roll out the vegan puff pastry and cut into 15 even pieces. Roll the carrots into the puff pastry with carrot ends poking out on each side. Pinch and seal closed. Lay them on the lined baking sheet and bake for about 15 minutes or until golden and crisp. Serve with yellow mustard for dipping.
