Cowboy Caviar Recipe
One of our favourite appetizers when the sunshine comes out is this veggie-packed Cowboy Caviar! Not only delicious, it's also a great way to use up any leftover vegetables in the fridge. Perfectly paired with a glass of dry white wine and some salted tortilla chips for dipping.
Ingredients:
- 3 roma tomatoes, diced
- 3 ripe avocados, diced
- 1/2 red onion, diced
- 1 can mixed beans, rinsed and drained
- 1.5 cups frozen corn, thawed
- 1 bell pepper, diced
- 1 jalapeno pepper, diced
- Optional: Cilantro, diced
- Tortilla chips for serving
Dressing Ingredients:
- 1/2 cup olive oil
- 2 tbsp lime juice
- 2 tbsp red wine vinegar
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
Instructions:
Dice up all your veggies and add to a large bowl. Mix together the dressing ingredients and pour over the vegetables. Gently mix together so the dressing evenly coats the veggies. Keep refrigerated and eat within the next few hours so it stays fresh and crispy.
