Gluten-Free Banana Chocolate Chip Muffins Recipe
Nothing beats coming home after school or work to freshly baked banana chocolate chip muffins. We’ve created a gluten-free version for those who are gluten-sensitive or Celiac. These pair perfectly with a homemade frothy vanilla oat milk latte. We have some great gluten-free all purpose flour options at the store!
Ingredients:
- 3 very ripe bananas
- ¾ cup brown sugar
- ½ cup butter, softened
- 2 large eggs
- 2 cups gluten-free all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- ¾ cup chocolate chips
Instructions:
Preheat your oven to 350. Grease 15 muffin cups and set aside. In a large bowl, mash the bananas with a fork. Add the brown sugar, softened butter, and eggs. Add the gluten-free flour, baking powder, baking soda, and salt. Mix until well combined. Add the chocolate chips and stir. Fill each muffin cup halfway with batter. Bake for 18-22 minutes or until a toothpick comes out of the center clean. Cool in the pan for 10 minutes before removing, then place the muffins on a wire rack. Enjoy warmed up with salted butter - yum!
