Vegan Romesco Dip Recipe
This hearty tomato “romesco” sauce is perfect for dipping vegetables, toasted crostini, a fresh baguette, or crackers of choice. It’s plant-based friendly with an earthy, smoked paprika flavour.
Ingredients:
- ½ cup toasted rolled oats
- 1 cup roasted red pepper
- ¼ cup sundried tomatoes
- 1 heaping tbsp minced garlic
- ½ cup toasted almonds
- 1 tbsp red wine vinegar
- 1 tsp smoked paprika
- ¼ tsp cayenne pepper
- ½ tsp salt
- 3-5 tbsp water, as needed to reach desired consistency
Instructions:
Toast the rolled oats and almonds. Roast the red pepper. In a food processor, combine all of the ingredients, starting with 3 tbsp water. Puree until smooth. Add more water to reach your desired consistency. Season with extra salt and pepper if needed. Perfect for dipping, but can also be added to pasta as a plant-based sauce.
