Vegan Valentine's Day Cookies Recipe

Make your honey something sweet for Valentine's Day with these plant-based sugar cookies. 

Cookie Ingredients:

  • 2 cups flour
  • 2 tbsp cornstarch
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 stick plant-based butter, softened
  • 1/2 cup sugar
  • 3 tbsp almond milk
  • 1 tsp vanilla
  • 5 drops red food colouring (to make red)
Icing Ingredients:

  • 3 tbsp plant-based butter, softened
  • 2 cups powdered sugar
  • 2 tbsp almond milk
  • 1/2 tsp vanilla
  • 2 drops red food colouring (less drops to make pink)
  • Red sprinkles
Instructions:

Preheat oven to 350. Line a baking tray with parchment paper. Mix the flour, cornstarch, baking powder, and salt in a large bowl. In a separate bowl, beat together the softened butter and sugar with an electric mixer until light and fluffy; for approximately 3 minutes. Add in the almond milk, vanilla, and red food colouring. Mix well. Pour the wet ingredients into the dry ingredients. Mix until the dough comes together. Move to a floured surface and roll the dough out to desired thickness. Use a heart cookie cutter and transfer to the baking tray. Leave some space inbetween the cookies. Refrigerate for 15 minutes. Bake straight from the fridge for 10 minutes. Remove and let cool. Make the frosting by combining the butter and powdered sugar with a hand mixer. Add the almond milk, vanilla, and food colouring. Whisk until you reach desired consistency. Frost the cookies and top with red sprinkles.
