Winter Squash Pizza Bites Recipe
We were gifted a massive zucchini on the weekend and used it to make these low carb pizza bites. This recipe is the perfect way to use up your winter squash. Not to mention it’s a nice appetizer for our low-carb friends.
- Pepperoni slices (or our Very Good Butcher Plant-Based Pepperoni)
- Tomato sauce
- Garlic powder
- Salt & pepper
- Shredded cheddar cheese (or our Parmela Creamery Plant-Based Aged Cheddar Shreds)
Preheat your oven to 350. Wash and slice your zucchini into bite sized rounds. Top each circle with a slice of pepperoni, followed by a dollop of tomato sauce. Sprinkle with garlic powder, salt, and pepper. Then top generously with cheddar cheese. Bake in the oven for 10-15 minutes and enjoy hot.
